Healthy oatmeal cubes!

Honey oatmeal bar is one of the recipes that tastes great and is healthier as well. Pediatricians also suggest to include oat meals and exclude extra sugar from you kid’s daily diet.

Ingredients:

Rolled oats-1/2 cup
Raisins (or any other dry fruits of your choice, cut into half)-1-2 tbsp
Self-raising flour (preferable wholemeal)-1/4 cup
Raw sugar -3/4 cup
Coconut (desiccated or shredded)-1/4 cup
Butter or margarine-80 gm (4 x 20 ml spoon)
Honey-1/2 -1 tbsp (I have used very little sugar, substituted it for more honey and increased the quantity of oats to more than half cup but less than 1 cup)

Method:

* Take all the dry ingredients in a bowl and mix them well.
* In another bowl take butter and honey. Mix well.
* Now pour this butter-honey mixture into the first bowl and mix well.
* Spread and press evenly the mixture into a greased baking tray.You can pat 2-3 times after pouring this mixture so that it will spread evenly.
* Preheat oven to 180 180ΒΊC/350F. Now bake the mixture for about 15-20 minutes or until golden brown, keep checking at regular intervals. I kept in on convection mode for about 20 mins untill it turned golden.
* Cut it into small cubes while hot.
* Remove the cubes from the tray when it cools down.

It is all ready to be eaten. It can last upto 4-5 days if stored in an airtight container. Hope you’ll liked it! πŸ™‚

You can also use some other flours (like oat flour, barley flour etc) or wheat flour in it instead of whole wheat flour in this recipe, but I am on “maida chodo abhiyaan” these days πŸ˜› , so it is whole wheat flour for me.

Here goes the recipe!

Ingredients:

Instant oat-1/2 cup
Whole wheat flour-1 Β½ cups
Egg-1
Milk-1 Β½-2 cups
Baking powder-1 pinch
Sugar-1 tbsp (or to taste)
Vanilla Essence-1/2 tsp
Butter-1-2 tbsp
Honey & nuts-for garnishing

Method:

* In a bowl take whole wheat flour and baking powder mix well. You can also take them in strainer and strain down, it helps in mixing them well too.
* Now separate egg into egg white and yolk. Beat egg white well (till frothy).
* Now in the whole wheat bowl, add the egg yolk and mix well. And add oat, sugar, vanilla essence and milk.
* Then pour the egg white in the batter. Turn with gentle hand and only in one direction.
* Now heat up a pan and spread butter in it.
* Pour 1-2 tbsp of the batter and let it cook.
* Cook both sides til golden brown.
* Take it out and garnish it with honey and nuts of your choice.

Serve hot! πŸ™‚

This is very great breakfast option as it is full of veggies which makes it healthy plus it is super-quick to make.So let’s move on to its recipe-

Ingredients:

Semolina-2 cups
Yogurt-1/2 cup
Salt-to taste
Mixed veg. of your choice-1 cup(chopped)
Eno-1/2 sachet
Oil-1-2 tbsp

Method:

-> Mix semolina, salt, curd and add little water to make a batter. It shouldn’t be runny.
-> Now add all veggies and 1/2-1 tsp of oil.
-> Heat up oil in a pan. And JUST BEFORE start making pancakes, add eno in the batter and mix gently with light hand(don’t over-mix it).
-> Now pour 2 tbsp of batter/pancake in the pan. Let them leave the edges, then sprinkle little oil around the edges and on the top of them and then flip them one by one.

-> Cook well the other sides too. It should be golden brown in colour.

Now take them out and serve with chatni/raita/sauce etc πŸ™‚

This is a super-quick recipe which you can serve to your guests in no time! So let’s get down to the recipe super-fast. Here it goes!

Ingredients:
Baby corn-15 nos.(cut into 2-3 pcs.each)
Capsicum-1 tbsp(cut into small pieces)
Onion-1 tbsp(cut into small pieces)
Garlic-1 tsp(finely chopped)
Black pepper-a pinch
Spring onion-for garnish
All-purpose flour-2 tsp
Cornflour-1 tbsp
Soy sauce-1-2 tsp
Salt-to taste
Green chilli-1/2 tsp(chopped)
Oil-for frying
Sugar-1/4 tsp(optional)
Tomato ketchup-1/2-1 tsp(optional)

Method:
-> Take baby corns in a bowl and add salt, 1/2 tsp of soy sauce, black pepper, little bit of garlic, 2 tsp of all-purpose flour and 2 tsp of corn flour. Add little water, just to make a paste. Cover the bowl with a lid and keep it aside for 10 minutes.
-> After 10 minutes, deep fry them till golden brown and take them out on a kitchen towel or a tissue paper.
-> Heat up oil in a skillet and add chopped garlic in it. After 10-15 seconds, add chopped green chillies.
-> Now add onion and fry till translucent.
-> Add capsicum and cook for 2-3 minutes(we want then crunchy, not soft). Add salt.
-> *Now in bowl take cornflour and mix water to it to make a solution. Add this solution into the skillet, a little at a time to get the desired consistency.
-> Add soy sauce and sugar or tomato ketchup(you can add both-sugar & tomato ketchup or you can skip both depending on your liking).
-> Now give it a stir and bring it to a boil before switching off the stove(if you want it totally dry you can skip step* or you can cook it for few more minutes to dry up the gravy)
-> Now garnish it with chopped spring onion and serve it hot as a starter or as an evening snack!

When it comes to breakfast, muesli, cornflakes and oats are the things I consider at last. I like to feed my family with fresh hot Indian breakfast. Until the morning is good and satisfactory, we can’t expect an energetic, high mood day. But my hubby leaves for office really early at 7 am. And I have to do hell lot of things before that-cook his lunch, cut a big bowl full of salad and another big bowl full of fruits which he carries to office and then make breakfast. And sometimes, my 2 years toddler wakes up at the same time and clings to me. Making him engage in some activity also takes away some time. So because of the time constraint, I can’t indulge into lengthy breakfast option, but I try to incorporate the maximum nutrients I can in the quick breakfast I make. Here is the recipe of one of those quick, easy breakfast options, veg. chila & gooseberry chatni.

Ingredients for veg. chila:

Gram flour/besan-2 cups
Veg. of your choice-1/2-1 cup(finely cut)
Green chilli-1/4 tsp(chopped)
Black pepper powder-1 pinch
Dry fenugreek/kasuri methi-1 tbsp(roughly crushed with hand)
Salt-to test
Turmeric powder-1/2 tsp
Oil-1 tbsp
Water-1 Β½-2 cups(approx.)

Method for making veg. chila:

-> Mix gramflour, turmeric powder, salt and water.
-> Beat them properly to avoid any lumps plus to aerate the mixture.
-> Now add rest of the ingredients and mix them well (if time permits, keep aside for 5 minutes).

-> Now grease a pan and keep it on the stove.
-> Pour the batter(we don’t want a very hot pan while pouring the batter because it resists the spreading of batter properly).
-> Now when you find that the batter is leaving the edges, sprinkle a bit of oil around it and on its surface and give it a flip.
-> When both the surfaces are cooked properly, take it off the pan.

Now the Chatni. Amla is so rich in Vitmain C, I think everyone should try to have it daily, be it in any form.

Ingredients for goosbery chatni:

Gooseberry/Amla-2
Garlic-6 cloves(if small)
Green chilli-1
Coriander leaves-5 tbps
Extra virgin olive oil or mustard oil-1-2 tsp
Lime juice-1 tsp
Salt-to taste

Method for chatni:

-> Mix all the ingredients and run the mixer.
-> Adjust salt, oil and lime juice as per your liking.

Penne with tomato-garlic sauce/Penne Arrabiata!

Yesterday, my hubby planned spontaneously to eat out while we were just driving near our house to give dear son a round. And the funny part was that I was wearing my home clothes-a donald duck top and a floral print lower with “ghar ka chappal”and he insisted me to enter pizza hut in that state :(. I entered and hid my legs below the table :P. We decided to take the order(chicken BBQ roll for hubby, veg pasta for me and veg. pizza for both of us)as parcel and here comes the tragic part-when I opened the pasta box at home, it was a non-veg one 😦 :(. And then I had to eat the dinner which I had already prepared. So to compensate for my yesterday’s tragic situation, I made pasta today for breakfast, with loads of veggies and a yummy tomato-garlic sauce πŸ™‚ The sauce was quite similar to the arrabiata sauce, but I didn’t add chilli flakes in it since I can’t bear chillies much. If you like it, go ahead, add chilli flakes and thymes in the sauce and skip soy sauce then you’ll have arrabiata sauce ready!

Here goes the recipe-

Penne with tomato-garlic sauce

Ingredients:

Penne pasta-2 cups(I had a spoon of fusilli in my kitchen; so I added that too)
Onion-1 small (chopped)
Capsicum-1-2 tbsp (diced)
Mix veg of your choice (I’ve taken spinach, green beans, broccoli)-1/2-1 cup (cut into pieces)
Baby tomato-10 nos.
Garlic-1 tbsp (finely chopped)
Black pepper powder-1/2 tsp
Soy sauce-1/2 tsp
Parmesan cheese-2 tbsp (grated)
Basil leaves-1 tsp (chopped) (if you can’t get it, then take the dry one)
Oregano- 1/2 tsp
Salt-to taste
Olive oil-2 tbsp

Method:

-> Boil pasta in salted water. Drain, run through cold water and add a little bit of oil in it to avoid them sticking together.
-> Steam-broccoli, spinach, green beans. If you do not like steamed veg you can sautΓ© them πŸ™‚
-> Now heat oil in a pan and add garlic to it. SautΓ© it till the raw smell fades (do not turn brown).
-> Add baby tomatoes cut into 4 pcs each.
-> Add salt and basil in it and cover it with a lid and let it turn softer(Check it regularly. If you find it is sticking to the pan, you can add/sprinkle little water in it) add soy sauce.
-> Cook for about 5-7 minutes. Now add back pepper, cheese and oregano. Mix well and turn off the stove.
-> In another wok heat up oil and add capsicum in it. After 2 minutes add onion in it. Cook till onion turns transparent.
-> Add rest of the boiled veg(sautΓ©d veg) and salt. Toss it for approx. a minute or two and then add pasta in it.
-> Cook for 1-2 minutes. Switch off the stove.

Now serve the pasta with the tomato-garlic sauce. Garnish with oregano and cheese. Serve hot! πŸ™‚

Happy Independence Day, beautiful ladies πŸ™‚ Hope you’ll are enjoying your holiday, today! No holiday here 😦 How I miss those jalebis mom used to bring home every independence day without fail. It was a kind of ritual! Anyway, I had maggi today for breakfast to compensate for jalebis πŸ˜› Ok, now lets move on to the real topic!

Don’t we tend to have masala corn whenever we get to see it in the shopping malls? It is super easy and quick to make and we can make it at home too as an evening snack. You can experiment and add ingredients as per your liking. If you want to make it a little bit Indian way, you can also add chopped onion, coriander leaves, chat masala and tandoori masala. Here I am sharing the way I make it and the way I like it πŸ˜‰

Ingredients:
Frozen sweet corns-1 bowl
Salt-1 pinch
Butter-1-2 tsp
Black pepper powder-1/4 tsp
Lemon juice-1 tsp
Vinegar-1/2 tsp
Red chilli powder-1/4 tsp (in the pic above, I have not added red chilli powder)

Method:

-> Take out the frozen sweet corns in a MW safe bowl and microwave it for 4 minutes. If you don’t want to MW it then you can steam it πŸ™‚
-> Now mix well all the ingredients in it and have it warm πŸ™‚

Dahi vada with khatti-meethi chatni..

Dahi Vada

Dahi Vada is one of the famous dishes of India. It can be made either with moong dal or with urad dal or even by mixing both. Here is the recipe of dahi vada made with urad dal.

Ingredients for dahi vada:

Dhuli urad dal(Ivory white lentil)-2 cups
Green Chilli-1-2 pc(s)
Ginger(grated)-1/2 tsp
Salt-1/4 tsp or to taste
Cumin seeds-1/4 tsp
Baking soda-1 small pinch
Red chilli powder-1/4 tsp
Hing powder(asafoetida)-1 pinch
Roasted cumin seed powder-1/2 tsp
Yogurt-2 cups
Black salt-1/2 tsp
Oil-for deep frying

Method for making dahi vada:

-> Soak dal(lentil) overnight.
-> Next day mix all the ingredients(lentil, cumin seeds, grated ginger, green chilli, asafoetida, baking soda, salt) together and grind it in a grinder(add little water just to help with the grinding process. The paste/mixture shouldn’t be runny).
-> Now heat up oil in a wok.
-> Apply water or oil on your palm. Take 1 tbsp of mixture on your palm and spread it to give a round shape(you can also pour 1 tbsp of mixture directly into the oil for spherical shape).
-> Now pour that mixture into the oil. Deep fry it.
-> In a bowl take water. When you take out vadas from the oil put it in the water bowl.
-> In another bowl take yogurt and beat it well. Add little water, salt and roasted cumin seed powder along with little bit of red chili powder.
-> Now take out the vadas out of the water bowl, one by one. Squeeze out the water till the last drop and put the vadas into the yogurt.
-> Let it seat there for around 20-30 minutes.

Now let’s get down to the recipe of khatti-meethi imli chatni-

Ingredients for chatni:

Imli(tamarind)-1/2 cup
Sugar-1 cup
Black Salt-1/4 tsp or to taste
Coriander Seeds-10 nos.
Red Chilli-1 pc.
Sauf(fennel)-1/2 tsp

Method for chatni:

-> Soak tamarind in warm water for around 1/2 hr.
-> Squeeze out the pulp and separate the seeds.
-> Now in a wok take the tamarind pulp, sugar and black salt.
-> Put the wok on the stove and let the sugar melt and the mixture boil. Slow down the flame and stir continuously to prevent burning.
-> Dry roast coriander seeds, red chilli and fennel. Make its powder and add in the tamarind-sugar mixture.
-> Cook for 1-2 minutes(we don’t want the chatni to be so thick and also keep it in mind that the chatni will thicken further after cooling down).
-> Switch off the stove. Take out the chatni in a bowl and let it cool down.

Now about arranging the daha vada(s),

In a plate, take dahi vada(s) and add a bit of thick yogurt. Now sprinkle little black salt, roasted cumin seed powder and red chili powder. Spread 1-2 tsp of chatni over it. You can also add bhujia etc for some crunch! It’s all ready to be relished πŸ™‚

P.S: About storage-you can store the chatni in refrigerator for 1 month easily. You can store the vadas for 4-5 day(s) in refrigerator. You just need to do the following-after frying the vadas you don’t have to put them in water instead you need to take them out on a tissue paper and when they cool down, store them in an air-tight container. When you have to eat/serve them, just take them out of the fridge and dip in warm water for sometime and then follow the same process as mentioned above πŸ™‚

How to make the perfect cup of “cappuccino” at home(without any fancy tools)!

Coffee making is a real art, believe me! And many fail miserable in it, esp. we, the Indians 😦 😦 (ok, maybe some other nationals too).
The biggest mistake done by us is to treat tea and coffee equal and prepare them the same way. But the fact is that they are totally opposite in their nature. While boiling tea enhances its flavor, it is the opposite with coffee. Its flavor diminishes with boiling. So now let’s learn making a perfect cup of coffee.

Ingredients:

Ingredients required..
Coffee powder-1 tsp
Sugar-2 tsp(for moderate sweetness) or to taste
Water-1-2 tsp
Milk-1 cup
Bottle-any small bottle(in the pic shown, I’ve used an old mouth-freshener bottle)

Method:
-> In the bottle take sugar, coffee and water.
-> Put its lid and shake. You need to shake the bottle till the mixture turns light brown.
-> In the meanwhile heat up(or boil) a cup of milk.
-> Now comes the arranging/layering time. In a cup take 1-2 tbsp of milk and add a little bit of the mixture. Stir once, just ONCE.
-> Now add another layer of milk and then a little bit of mixture and stir.
-> Repeat the process once more. For the cup size shown in the pic, there must be 3 layers of milk and the mixture with the milk at the bottom and the mixture at the top.

How to make popcorn at home!

Popcorn is everyone’s favourite. Hey! but why do we eat popcorn while watching movies?*just thinking* I don’t know, but what I know is that the market is flooded with lots of instant popcorn options these days. They are double the price and half the nutritional value to the one we can make at home. Then why not to make it at home only? Here is how:

Ingredients:
Corn kernels-1 cup
Veg. oil-1 tbsp
Melted butter-1 tbsp
Black pepper-1/4 tsp
Salt-to taste

Method:

-> In a wok take corn kernels and oil. Mix well.

-> Now cover it with the lid and keep it on the smallest burner of your stove at the lowest flame.

-> The corns kernels will start popping. Just keep an eye on it, it shouldn’t burn. Generally it takes about 10 minutes.

-> Now switch off the stove, mix melted butter, salt and pepper.

PS: Never use butter in place of oil for popping up the corns kernels as butter has the tendency to burn. Always add butter at the end, same applies to salt!
