Mushroom Masala

We had this curry few months back in a veg. thali and we really loved it. I tried to imitate the curry at home and it turned out to be quite similar to the one we had in that thali. And since then it has been added in my kitchen’s menu πŸ˜› Here follows the recipe.

Ingredients:

Button Mushroom-2 cups (each cut to 4 pcs.)
Onion-1 small (diced)
Bell pepper-1/2 cup (diced)
Ginger-garlic paste-1 tsp
Onion paste-2 tbsp
Tomato puree-1 tbsp
Cumin seeds-1/4 tsp
Turmeric powder- 1/4 tsp
Coriander powder- 1/2 tbsp
Cumin powder-1/4 tsp
Black pepper powder- 1 pinch
Fennel seeds-1 pinch
Kasuri methi-2 tsp
Red chilli powder- 1/2 tsp (or according to your liking)
Salt-to taste
Oil-2 tbsp

Method:

-> Shallow fry mushroom, diced onion and bell peppers till tender (don’t overcook). Keep aside.
-> Heat up oil in a wok. Add cumin seeds and fennel seeds.
-> Add ginger garlic paste. Fry till its raw smell fades.
-> Add onion paste and fry till golden brown.
-> Now add all the dry masalas (turmeric powder, coriander powder, cumin powder, red chili powder and black pepper powder)
-> Fry for 1-2 minutes. Now add tomato puree and salt.
-> Fry till it leaves oil.
-> Add crushed kasuri methi.
-> Now add the fried onion, mushrooms and bell pepper.
-> Add little water. Give it a boil.
-> Turn off the stove.

Serve hot with chapati (or whatever you’d like it with) πŸ™‚

Ingredients:

Mushroom-2 cups(cut into 4 pieces each)
Mixed bell pepper-1 cup(diced)
Onion-Β½ cup(diced)
Garlic-1 tbsp(finely chopped)
Green chilli-1 tsp(finely chopped)
Spring onion-1 tbsp(chopped)
Rice flour-1 tbsp
Corn starch-1 Β½ tbsp.
Soy sauce-1 tbsp
Green chilli sauce-1 tsp
Vinegar-1 tsp
Sugar-1 tsp
Tomato sauce-1 tbsp
Black pepper-ΒΌ tsp
Salt-to taste
Oil-for frying

Method:

-> Take all(1 tbsp) rice flour, salt, a pinch of black pepper, 1/2 tbsp of cornflour in a bowl.
-> Add water to make a paste. It shouldn’t be so thick.
-> Now heat oil in a wok.
-> Coat mushrooms with the mixture and deep fry till golden brown.
-> Now in another pan heat oil.
-> Add green chilli and garlic.
-> Now add all the bell peppers.
-> After 1-2 minutes add onion. Note that we want the bell peppers to be crunchy so refrain from overcooking.
-> When the onions turn little transparent, add salt and water just till it covers the veggies.
-> Now in a bowl make mixture of cornflour and water.
-> Add the mixture slowly, a little at a time to get the correct consistency. Stir continuously.
-> Now add mushroom, soy sauce, chilli sauce, tomato sauce, sugar, vinegar and black pepper.
-> Cook for 1 minute and turn off the stove. Garnish with spring onions.

Serve hot! πŸ™‚

Ingredients:
Mushroom-2 cups
Frozen peas-3/4 cup
Onion-1 large(pureed)
Tomato-1 small(pureed)
Cashew nut-1/4 cup(soaked in water and pureed)
Cumin seeds-1 tsp
Coriander powder-1 tbsp
Green chilli-1(chopped)
Garlic paste-1 tsp
Turmeric powder-1/2 tsp
Salt-to taste

Method:
-> Heat up oil in a wok and add cumin seeds.
-> When the cumin seeds start splattering, add onion puree to it.
-> After 2 minutes add garlic paste to it.
-> When their raw smell fade add all the dry spices, salt and green chilli to it.
-> Cook till oil separates.
-> Now add tomato puree and let it cook for 4-5 minutes.
-> Add cashew nut paste and stir well for 1-2 minutes. If you finding it thick you can add water to it.
-> In another pan fry mushroom and peas.
-> Now add the fried mushroom and peas to it and cook for another 2 minutes.
-> Switch off the stove.

Serve hot with Roti/Naan/Paratha πŸ™‚
